POTATO TYPES

Russets

An oblong or round shaped tuber with russeted skin, and white flesh. These are generally a fresh market potato and are excellent for baking and frying.  These varieties tend to carry a higher specific gravity.

 

Reds

These varieties have an attractive, pink-red skin and white flesh.  They are a multi-purpose fresh potato whose most popular uses are for mashing and potato salads. They carry a medium specific gravity and a higher moisture content.

 

Yellow

These varieties are round or slightly oval in shape, with yellow skin and flesh.  They are a multi-purpose fresh potato with medium specific gravity and a high moisture content.  Most popular uses are boiling, baking and frying.
